I used to absolutely despise potato salad until my dad taught me how to make it properly. Anything can be delicious if made right. This recipe is perfect for winter- very filling and flavourful. If you are not a potato salad person, don't throw in the towel until you try this recipe first!
~4-6 red potatoes
~3-5 hardboiled eggs
~1/3 red onion
~3 TBSP veganaise/mayo
~1 TBSP balsamic vinegar
juice of ~1/2 a lemon
salt & pepper to taste
The ingredients are completely approximate because it depends on your desired ration of ingredients as well as desired level of wetness/dryness of the salad. For a moister salad, add more mayo. I like to keep a pretty even ratio of potato to carrot to egg with potato being highest>carrot>egg>onion.
Start by washing the carrots and potatoes. Boil them until cooked (tender when poked). The eggs I boil for about 8-10 minutes.
Peel the eggs potato and carrots and chop coarsely. You can also peel the carrot and potato before boiling. Combine everything in a bowl and adjust to your taste- enjoy warm! You can also store this in a container overnight- its good cold too :)
